The Classic Venison Ragù of Casa Cesarine has a pronounced and characteristic wild aroma, compared to the delicacy of the roe venison ragù that you'll also find in our range. As with the other game varieties, the secret lies in the preparation: a perfect marinade with red wine and herbs. This process allows the tender meat to absorb the scents of aromatic herbs such as bay leaves, rosemary and sage.
The cooking process is like the classic ragù sauce we make at home, based on a sauté of celery, carrots and onion, good red wine and a prolonged cooking over a low heat. The result is a robust flavour, for a gorgeous comfort dish.
