In the collection of game-based sauces by Casa Cesarine, the roe venison ragù, known as 'capriolo' locally, is perfect for the whole family, thanks to its mild and delicate flavour. It is less intense and robust than wild boar and other varieties of venison. A careful selection and research of top-quality ingredients that Cesarine have chosen to give this sauce a unique fragrance and flavour: fine meats from Emilia-Romagna, Cervia sea salt and fresh aromas of mint and rosemary.

Thanks to the traditional recipe of our expert cooks, in no time at all, you can bring to the table an elaborate dish that is the result of a long preparation. This sauce will become a firm favourite in your home!

Ingredients: roe 53%, tomato puree, pork belly, red wine, celery, carrot, extra-virgin olive oil, onion, Cervia sea salt, garlic, black pepper, rosemary, mint. Gluten free.

The perfect combination for this delicate ragù of roe venison is the egg pasta of Cesarine. From pappardelle to rustiche, as well as the iconic tagliatelle, long pasta shapes are the ideal pairing. They are able to capture the sauce and, thanks to the porosity and roughness of the dough, it will absorb the delicious flavours.

Our short pasta shapes are also excellent for children: the farfalle, thanks to its special 'butterfly' shape, perfectly captures the sauce, and the garganelli, with its characteristic ridges, ideally holds the sauce.

The Cesarine suggest draining the pasta a few minutes before the end of the usual cooking and tossing it into a non-stick pan where you have already heated the sauce. Keep aside a ladle of the pasta cooking water and use it to lengthen the sauce. Reduce down for a couple of minutes on the heat and that's it! Your beautiful Italian pasta is ready to enjoy.
