A few simple ingredients come together in this a famous dish of the Italian tradition. Typical of the Lazio region's cuisine, where you'll find Rome, the Arrabbiata sauce has been a family favourite for generations.

Cesarine's original recipe for Arrabbiata includes the typical ingredients of the Mediterranean diet: cold-pressed extra-virgin olive oil, a crushed clove of garlic, strictly Italian tomatoes, Cervia sea salt, finely chopped parsley and lively fresh chili pepper. The ideal balance of aromas, flavours and spiciness for any occasion.

Just as the iconic Bolognese ragù is to be eaten with tagliatelle, Arrabbiata sauce is enjoyed with penne pasta. To create the perfect pasta dish for any occasion, penne pasta (ridged, rather than smooth) is the ideal match for the Cesarine's Arrabbiata sauce. Our expert cooks suggest heating the sauce in a non-stick pan. Cook the pasta in boiling salted water, and just before you drain the pasta, add a ladleful of the cooking water to the sauce. Then, toss the drained pasta in same saucepan for one minute before serving. If desired, add a generous sprinkle of grated hard cheese to serve: Pecorino or Parmesan. Buon appetito!
