Farfalle Pasta
Farfalle is a pasta shape that is loved all over Italy, and is especially popular with children. Like all Cesarine products, the recipe is faithful to generations of Italian tradition: they are prepared only with fresh eggs and durum wheat semolina, strictly of Italian origin.
To give the dough this shape, the dough is cut into squares with a knurled edge, which are then pinched in the centre to give it the "farfalla" (butterfly) shape. In Bologna this pasta is known as "strichetti" (little scraps) as families will make them by hand using the off-cuts from the dough used to make their traditional pasta such as tortellini. Nothing goes to waste in Italian home cooking! As it is thicker where it's pinched in the centre, this pasta will give you a perfectly decisive 'al dente' bite.
