The dish symbol of the Eternal City, loved by all, the star of our online and in-person cooking classes. A recipe that even has its own annual day of celebration, April 6th. Every self-respecting Roman Cesarina is a connoisseur of the original recipe that you can't miss if you're travelling to Rome.
This sauce is the result of careful research and selection of excellent quality ingredients such as Pecorino Romano DOP, guanciale bacon and fresh egg yolks, just like real Romans make at home. The creaminess of the dish and ideal flavour balance make our carbonara the perfect recipe to impress your friends and family around the table.

When in season, some Cesarine embellish this dish with a few slivers of truffle and some even add artichokes or asparagus, but the best way to enjoy this dish is to simply pair it with great pasta cooked al dente. There are three suggestions for a perfect preparation: heat the sauce gently in a non-stick pan with a ladle of pasta water, do not overdo the salt in the cooking water and add a generous sprinkle of grated Pecorino Romano DOP before serving. All that remains is to wish you "buon appetito"!
